The potato is the most precious “treasure” discovered by the Spanish in South America. Cultivated by the Incas, it arrived in Spain in 1534 to be subjected to botanical studies. The potato reached Italy with missionaries, but were initially used only as feed for livestock. Gradually, they have become an irreplaceable element of the European diet, and are used in the preparation of numerous recipes. No other vegetable lends itself to being prepared in as many tasty ways as the potato: baked, fried, boiled, mashed, in omelettes, au gratin, in soufflés and others still. The diverse varieties of potatoes that exist are undoubtedly the key to the success of its universally diffused use; each cultivar presents characteristics that are suited to one preparation as opposed to another, such as consistency and taste. While at one time, the potato was used only as a side-dish, today it is often the main ingredient of the recipe, rightfully assuming the role of main course. So it is that the potato, a bit like pasta, has entered our DNA.
