One need only say corn meal, and the food that comes to mind is known to all as the food of the poor: polenta. Interpreted as the symbol of conviviality, the most popular dish of our culinary tradition still today recalls the good things of once upon a time, though it has a millenarian history behind it. “Polenta” has always been used to refer to any vegetable, especially legumes, cooked to a pulp (from the Latin “pultis”, meaning pulp). It has very ancient origins which can probably be associated to the times when it was eaten with the hands; suffice the presence still today, and in almost all gastronomic cultures, of a polenta with very ancient origins or that has at least inspired other, more modern culinary preparations (meal, semolina, etc). The recipes contained in this book come from all of the regions of our country; they are often old recipes, but there are also new interpretations or preparations more consonant to the styles of life and cooking of our times.
